Everyone seems to be eating more eggs these days. Most people are trying to cut carbs and
increase their protein intake. Eggs are also great for your grocery budget since they are
relatively inexpensive for the protein they provide.
My family loves eggs, especially when they are made more interesting with the addition of meat, vegetables and cheese. Our favorite way to make them is to create a no-recipe casserole and bake it in the oven. This method allows hands-off cooking, so you can go back to bed for an hour, or go to church, or read the Sunday paper for example, without having to tend the eggs like you would if you were making an omelette. Also, they reheat relatively well, so you can make it on the weekend and have it for breakfast or lunch during the week.
A casserole also allows you to clean out your deli drawer of any leftovers like bacon, sausage,
ham, etc., along with any cheese you happen to have in your cheese drawer. A mixture of any
and all of these is just ﬁne! We usually throw in a can of Ro-tel Tomatoes and Green Chilies
because we like things a little spicy, but you could alternatively sauté onions, peppers, garlic,
kale, spinach, even brussels sprouts and sweet potatoes, and add that to the mix. Below is the
version I can make in my sleep since I’ve done it so often!
